Pancakes are a weekend staple in my house, so my list of pancake recipes are endless (peach pancakes, pumpkin pancakes, or my perfect chocolate chip pancakes…). Each pancake recipe is special and unique, and what makes this one amazing is that it’s gluten free without the use of any weird kinds of flours.
All you do for these pancakes is grind some oats, mix with milk, eggs, oil and a couple other ingredients. Add some chocolate chips to make these just a tad sweeter, and serve with some maple syrup!
When the oats are ground, you don’t taste the grittiness that is typical of oats and they taste pretty darn close to regular pancakes.
Large-Batch Oatmeal Pancakes

Serves 10
Ingredients
- 5 eggs
- 3 cups milk
- 5 tablespoons coconut oil, melted
- 1 tablespoon vanilla extract
- 2 ½ teaspoons baking soda
- 2 ½ teaspoons baking powder
- 1 ½ teaspoons salt
- 1 tablespoon cinnamon
- 2 tablespoons sugar
- 5 cups oatmeal, ground in a blender
- 1 ½ cups chocolate chips
Instructions
- 1. Heat a large skillet over medium heat.
- 2. Whisk together the eggs, milk, oil and vanilla. Add the baking soda, baking powder, salt and cinnamon. Stir in the oatmeal. At this point, your batter may be slightly runny or slightly thick – this depends on how you measured the un-ground oats. You may have to add more oats (they don’t have to be ground this time) or more milk. Do this until you have a desired pancake batter consistency (it should be like cake batter).
- 3. Stir in the chocolate chips, the cook the pancakes on a buttered skillet.
