Light and zesty muffins with just a hint of cardamom. Serve warm with a bit of butter!
Orange Cardamom Muffins
Ingredients
2/3 cup granulated sugar
zest and juice of 2 oranges
2 cups flour
2 tsp baking powder
¼ tsp baking soda
¼ tsp salt
1/2 tsp cardamom
2/3 cup buttermilk
2 eggs
1 tsp vanilla extract
½ cup unsalted butter, softened
turbinado sugar, to top
1 tsp cinnamon
Directions:
1. Preheat oven to 400F. Line muffin trays with paper liners or oil.
2. In a medium bowl, combine flour, baking powder, baking soda, salt, and cardamom.
3. Mix together the sugar and orange zest until it resembles wet sand. In the bowl of a standing mixer, whip the butter and sugar mixture together. Next add half the flour mixture. Add all the liquid ingredients, then add the rest of the flour mixture. Be careful not to over-mix.
4. Pour batter into muffin tins until ¾ full. Sprinkle tops with turbinado sugar and cinnamon. Bake in the oven for 5 minutes, then turn down the heat to 350 and bake for another 13-15 minutes.
