Yes, you read that post title correctly: these are the perfect chocolate chip pancakes. Why? Because they’re fat and fluffy, made with whole wheat flour, and you can whip them up in minutes.
But, before I give you the recipe, I’d like to announce the opening of my new Etsy shop! Last week I worked on setting up my site (etsy.com/shop/jackiesdelights) where I’ll be selling handmade accessories, purses, pouches, and hopefully some laptop sleeves too.
Currently, there are scarves, headbands, and zipper pouches and I hope to be adding more summery items. I also enjoy knitting and crocheting but will probably wait until fall to post the bulk of those items.

Back to the pancakes: this recipe is based on my favorite oatmeal pancake recipe, only the oats were taken out and replaced with more whole wheat flour to create a healthy, yet thick and fluffy, pancake.
A small dose of chocolate chips and cinnamon are added to allow for a deliciously sweet breakfast (without being over-the-top). Of course, you can omit the chocolate chips or simply add less if they’re too much. Or, try adding different types of chips: butterscotch, white chocolate, peanut butter… the possibilities are endless!
- 2 cups whole wheat flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tbsp. granulated sugar
- 1 ½ cups buttermilk
- 1 tsp. vanilla extract
- 2 eggs
- 2 tbsp. canola oil
- 1 cup chocolate chips
- 1. Mix together dry ingredients, then add wet ingredients. Fold in chocolate chips.
- 2. Heat pancakes on a skillet, flipping as needed until cooked.
