The classic cinnamon-sugar cookies are made allergy-friendly with gluten-free flour and by using applesauce instead of eggs.
Vegan + GF Snickerdoodles
1 cup vegan butter
1 1/4 cups turbinado sugar
1/4 cup applesauce
2 tsp vanilla extract
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
3 cups gluten-free flour (use a one-to-one replacement)
1/4 cup granulated sugar
2 tsp ground cinnamon
1. Preheat oven to 325ºF. In a medium bowl, cream together the bugger and sugar. Add applesauce and vanilla. Next add cream of tartar, baking soda, and salt. Finally, add in the gluten-free flour and mix until fully incorporated.
2. In a small bowl, mix together the granulated sugar and cinnamon. Scoop tablespoon-sized pieces of dough. Shape into a sphere in your hands, then dip in the cinnamon sugar.
3. Bake for about 8-10 minutes, rotating the cookie sheet halfway through.
