Pumpkin Ice Cream Pie

Pumpkin Ice Cream Pie.9v2My little brother, Alex, is absolutely obsessed with pumpkin pie, cheesecake, and speculoos cookies. He also loves skittles and sour patch kids, but of baked desserts, those three are by far his top favorites.

Pumpkin Ice Cream Pie.8v2I occasionally make pumpkin pie, but I like to experiment a lot more than making the same classics over and over. So at the beginning of the fall, I bought a bunch of pumpkin cans with the task of coming up with new pumpkin recipes. I came up with this one as a sort of spin-off of my sweet potato cheesecake recipe (Alex also loves that one!). I used the same crust as that recipe, but the filling is a whipped-cream based filling. Pumpkin Crumble Cake

Yes, I realize that it’s January and by now many people have grown tired of pumpkin, ginger, and cinnamon in all their desserts, but this is a must-have recipe throughout your winter.

Plus, with all the terribly cold weather we’ve been getting in the midwest and east coast, lightly spiced desserts like this one really do seem to warm you up.

And this has been one of the best coffee cakes I’ve made in a while (though I’m not quite sure this one has topped the Apple Crumble Cake I made this past fall).  (more…)

Spiked Pumpkin Pie

I know that Thanksgiving has long been over, but pumpkin pie is definitely a wintery treat that can definitely be made all season long.

Weekend mornings begin with awesome breakfasts at my house. Since we recently cooked the massive pumpkin we bought a while back, I have been on my quest to find the best pumpkin recipes.

It came to me that I should make pumpkin pancakes, as pancakes are a popular item at my house. After my first bite of these delicious treats, I realized that it was a recipe that I would need to make again these next couple of weeks (depending on how long our pumpkin supply lasts).  (more…)

Light Pumpkin Muffins

Fall has been here for quite some time now, but I feel that the time between Halloween and Thanksgiving is the best time to bake pumpkin treats. I also love almost anything that’s sweet and pumpkin-flavored, so these next couple of days and weeks you’ll definitely be seeing more pumpkin-inspired treats!

It is important to know that these muffins are very special. They start with a perfectly balanced batter: not too sweet or too dry. A cream cheese filling adds to the overall softness. A crumb topping is put to finish, adding that needed crunch.  (more…)
