Banana Bread Pancakes

Bananas are definitely a staple fruit in my house, but they are also the only fruit that seems to always be going bad. Maybe “going bad” is the wrong expression, but none of us like to eat them once they turn too soft and brown. Banana Bread Pancakes.4

Perfect Chocolate Chip Pancakes + My Etsy Shop!

Yes, you read that post title correctly: these are the perfect chocolate chip pancakes. Why? Because they’re fat and fluffy, made with whole wheat flour, and you can whip them up in minutes.

But, before I give you the recipe, I’d like to announce the opening of my new Etsy shop! Last week I worked on setting up my site (etsy.com/shop/jackiesdelights) where I’ll be selling handmade accessories, purses, pouches, and hopefully some laptop sleeves too.

Banana Blueberry Pancakes

Have you ever made pancakes in a blender before? Turns out, this is actually a much easier method than the typical bowl-and-spoon mixing that you’re probably used too. Plus, pouring the batter into the pan is made much cleaner when there’s a spout on your blender.

And this recipe is great because the pancakes are soft and neither too thick nor too thin; they have a sweet, hearty oat-and-wheat taste to them, without having a grainy oat feel.

Weekend mornings begin with awesome breakfasts at my house. Since we recently cooked the massive pumpkin we bought a while back, I have been on my quest to find the best pumpkin recipes.

Whole Wheat Pancakes

This has been my long-time go-to recipe whenever I’m not sure what to make my family for breakfast. These pancakes are pretty simple, calling only for basic ingredients (nothing fancy).

They are also very healthy, with whole wheat and oatmeal. They’re readily adaptable: replace the oatmeal with more flour for a thicker pancake, add chocolate chips for a sweet treat, or change the amount of milk for varying thickness.  (more…)
