Weekend mornings begin with awesome breakfasts at my house. Since we recently cooked the massive pumpkin we bought a while back, I have been on my quest to find the best pumpkin recipes.
It came to me that I should make pumpkin pancakes, as pancakes are a popular item at my house. After my first bite of these delicious treats, I realized that it was a recipe that I would need to make again these next couple of weeks (depending on how long our pumpkin supply lasts).
Pair these with some eggs, maybe hash browns, and you’ve made yourself a truly stellar breakfast.
Pumpkin Pancakes

Ingredients
- 1 ½ cups milk
- 1 cup pumpkin puree
- 1 egg
- 2 tablespoons canola oil
- 2 tablespoons vinegar
- 2 cups flour
- 3 tablespoons brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground allspice
- 1 teaspoon cinnamon
- ½ teaspoon ground ginger
- ½ teaspoon salt
Instructions
- 1. Whisk together milk, pumpkin, egg, canola oil, and vinegar. In a separate bowl, whisk together flour, brown sugar, baking powder and soda, allspice, cinnamon, ginger, and salt.
- 2. Heat and oil a griddle or pan. Scoop batter onto the pan, about ¼ cup per pancake. Cook thoroughly and serve while warm.
