Lately, I’ve been trying to come up with to-go breakfast ideas that I can easily eat at work. The other day, I remembered we had English muffins in the freezer and thought they would be perfect!
But when I took them out, I could tell right away that they were freezer burned (honestly not sure how long they had been there…) so I decided I would make some English muffins myself the following weekend. Homemade is better anyway, right?
These whole wheat muffins are amazing! They rise tall, have a perfect crumble, and have a nice, hearty touch due to the whole wheat. My ideal English muffin is toasted with some salted butter, topped with some raspberry jam! (more…)
Yes, you read that post title correctly: these are the perfect chocolate chip pancakes. Why? Because they’re fat and fluffy, made with whole wheat flour, and you can whip them up in minutes.
But, before I give you the recipe, I’d like to announce the opening of my new Etsy shop! Last week I worked on setting up my site (etsy.com/shop/jackiesdelights) where I’ll be selling handmade accessories, purses, pouches, and hopefully some laptop sleeves too.
Currently, there are scarves, headbands, and zipper pouches and I hope to be adding more summery items. I also enjoy knitting and crocheting but will probably wait until fall to post the bulk of those items. (more…)
After making white chocolate cranberry oatmeal cookies, I was inspired to turn the recipe into a muffin. I had a bit of trouble at first trying to think of what to call these muffins, and finally settled on crunchy cranberry muffins in attempt to keep it short.
Just like the aforementioned cookies, these muffins have white chocolate chips and dried cranberries. They get their “crunch” from two other things: the course sugar topping and macadamia nuts (though these are optional – I tried them with and without, both are great).
Though these don’t have oatmeal like the cookies, they are made with whole wheat flour, allowing for a healthy treat! (more…)
