Peaches baked to perfection with lemon, basil, and brown sugar. A simple but delicious summer treat!
Basil Baked Peaches
4 basil leaves
8 tsp brown sugar
4 tsp lemon juice
1. Pre-heat oven not 325ºF. Fill a medium pot with water and set to boil. Cut a cross into the bottom of your peaches. Boil the peaches for about 8-10 minutes, or until the skins start to peel.
2. Fill a medium bowl with ice and water. Place all the peaches in the ice bath for about 3-5 minutes, or until the peaches are cool enough to handle. When peaches have cooled, peel the skins off.
3. Place the peaches in an oven-safe dish. Place a single basil leaf into the cross the you cut earlier. Top each peach with 2 spoonfuls of brown sugar and one teaspoon of lemon juice. Bake for about 25 minutes. Serve with a scoop of ice cream.
