Woohoo! Cupcake Friday! Treat yourself to these delicious treats this weekend.
This is a super amazing red velvet cupcake recipe. They’re soft and spongey, flavorful and delicious. Plus, they’re topped with my favorite cream cheese frosting. This is honestly one of the best, simplest cupcake recipe you can get.
Plus, who doesn’t love red velvet?
These don’t need to be reserved for a special occasion either. Cut the recipe in half and treat yourself and your friends and family!
Red Velvet Cake

For the cake
- 2 ½ cups all purpose flour
- 2 cups (or 1-3/4) sugar
- 1 tbsp cocoa powder
- 1 tsp salt
- 1 tsp baking soda
- 2 eggs
- 1 ½ cups oil
- 1 cup buttermilk
- 1 tbsp vinegar
- 1 tsp vanilla
- 1 oz red food coloring
For the icing
- 8-oz cream cheese
- 1 stick (8-oz) butter
- 1 tsp vanilla
- 3-4 cups confectioner’s sugar (depending on how sweet you want it; I tend to stick with 3 cups)
Instructions
- 1. Preheat oven to 350F. Grease and flour two 8-inch pans or prepare 24 cupcake molds with cupcake liners.
- 2. In a large bowl, stir the eggs with a whisk. Add remaining liquid ingredients (oil, buttermilk, vinegar, vanilla, and food coloring).
- 3. In a smaller bowl, combine all dry ingredients (flour, sugar, cocoa powder, salt, and baking soda).
- 4. Pour the flour mixture into the liquid mixture. Mix just until combined.
- 5. Fill cupcake molds or baking pans. Bake for about 18 minutes for cupcakes, or 30 minutes for 8-inch cakes.
- 6. For the icing: Whip the cream cheese and butter. Add vanilla and sugar. Whip until light and fluffy.
