French toast made with homemade brioche and topped with an almond cream and berries. An elegant but easy weekend breakfast!
French Toast with Almond Whipped Cream
1 loaf of bread
3/4 cups milk
1 tsp vanilla
1 tsp cinnamon
1 cup heavy cream
1/4 cup granulated sugar
1/2 tsp almond extract
1. Heat a shallow saucepan over medium heat with about a quarter cup of oil.
2. Make the custard: whisk together all custard ingredients. Dunk a slice of bread into the custard, being sure to coat both sides. Fry in the pan with oil. When the French toast is cooked, drain on a paper towel. Repeat process until custard is finished.
3. Make the whipped cream: In the bowl of a mixer with a whisk attachment, add all ingredients. Whisk until stiff peaks form. Be sure not to over-mix. Serve the whipped cream on top of the French toast.
