Whole Wheat English Muffins

Lately, I’ve been trying to come up with to-go breakfast ideas that I can easily eat at work. The other day, I remembered we had English muffins in the freezer and thought they would be perfect!Whole Wheat English Muffins.10

But when I took them out, I could tell right away that they were freezer burned (honestly not sure how long they had been there…) so I decided I would make some English muffins myself the following weekend. Homemade is better anyway, right?Whole Wheat English Muffins.6

These whole wheat muffins are amazing! They rise tall, have a perfect crumble, and have a nice, hearty touch due to the whole wheat. My ideal English muffin is toasted with some salted butter, topped with some raspberry jam! (more…)

Jalapeño Cornbread

Cornbread is a special treat. It’s one of the few things that you really can’t buy in stores; sure, there’s a box mix, but you can’t buy fresh, warm home-style cornbread at most grocery stores, and bakeries don’t tend to carry it either. 

Actually, the other day I stopped in at Whole Foods and saw that they had small squares of cornbread wrapped in plastic. It was pretty cheap so I went ahead and bought a piece, but as soon as I opened it I was disappointed: it was too dry, and when I tasted it, it was just too bland. Jalapeño Cornbread.3

Even if the only way to enjoy good cornbread is to make it at home, that’s not at all a problem with this super amazing cornbread recipe! This bread is soft and cakey, with a nice crumb due to the addition of real corn. (more…)

Sticky Cinnamon Loaf

Maybe this isn’t the best post-Thanksgiving recipe — unless you still have guests at your house, waiting to be served something amazing for breakfast (something to refresh them after a long night/morning of Black Friday shopping).

This is a relatively simple yeasted bread, something much less labor-intensive than homemade cinnamon rolls, though very similar in taste. This is somewhat similar to monkey bread (for those who’ve tried that) because chunks of dough are thrown together with cinnamon-sugar filling in between.

Healthy Banana Bread

Bananas go bad pretty quickly in my house so I’ve tried various recipes to use the fruits before they completely rot. Banana bread is always the first thing that pops into my head as a recipe idea, and I’ve tried several different banana bread recipes, and I’m pretty sure I’ve reached perfection with this one (the only addition one might have is some walnuts).  

iced banana bread.5This bread is made perfectly moist with three whole bananas and half a cup of yogurt, as well as with the creamy glaze on top. Unlike a pound cake, this is a light and soft bread. 

iced banana bread.2And, since this is made with little butter and sugar, and a lot of fruit and yogurt, you don’t need to feel bad about going for seconds (or thirds or fourths…). Use whole wheat flour instead of white and this treat is made even better. And the glaze is completely optional; the bread is still super delicious without it.  (more…)

Whole Wheat Tortillas

Depending on which state you live in, it can be pretty difficult to find delicious tortillas at your local grocery store. It is especially hard to find fresh, handmade tortillas, even if there’s a Mexican bakery nearby; machine-made tortillas seem to be the norm in the states. So if you are looking for a delicious tortilla recipe, try this one out. Make these tortillas as thick or thin as you want them, and have them fresh off the stove. It is a lot quicker to make these tortillas than any yeasted bread and these taste wonderful served warm with a bit of butter!  (more…)
